Ingredients
1 shallot
6 garlic cloves
2/3 cup roasted red peppers
1 cup of cottage cheese
1 tomato
1/4 cup sun dried tomatoes
8 ounces linguini pasta
1/2 cup of Feta in the Brine
1 tsp garlic salt
1 tsp dry parsley
generous salt
generous pepper
1/4 cup chicken stock
1 tbsp olive oil
4 tbsp parmesan cheese
Recipe Instructions:
Set pot to high heat, add a lot of salt, and bring water to a boil. Add linguini and cook to Al Dente which is about 8-10 minutes depending on pasta.
Start on your pasta sauce. To your blender add roasted red peppers, cottage cheese, tomato, sun dried tomatoes, feta, and chicken stock. Blend all the ingredients until smooth.
Set Pan to medium-low heat and add 1tbsp of olive oil, shallot, and minced garlic cloves to sauté until soft, about 2 minutes.
Add pasta sauce to your pan, dry seasonings, and simmer for 1 minute to let the sauce thicken and soak up flavor. Taste, and adjust for more seasoning.
Drain Pasta, add to your sauce, and mix until well coated.
Serve Pasta and add 1 tbsp of parmesan cheese on top.
