Ingredients
1/3 cup of chicken broth
1/2 cup of mayonnaise
3/4 cup of sour cream
1 cup cream cheese
3/4 cup of mozzarella cheese
1 and 1/3 cup of parmesan and asiago cheese blend
1 and 1/4 cup of spinach
1 cup of diced marinated artichoke hearts
1 tomato
1/3 cup heavy cream
6 garlic cloves
1/4 cup onion
2 tsp garlic salt
1 tsp black pepper
1 tsp salt
2 tsp onion powder
2 tsp of parsley
2 tablespoons of olive oil
16 ounces of Linguine or flat Pasta
1/4 cup of pasta water
Recipe Instructions:
Pre-Heat Oven to 425 degrees.
Add water to your large pot and set it to high heat. Add generous amount of salt, 1 tbsp of olive oil and bring to boil. Add pasta to water and cook until Al-Dente (about 8-10 minutes depending on your pasta).
While pasta is cooking, prep your vegetables and sauce. Chop tomatoes, onion, and artichoke hearts and set aside. Finely chop your garlic as well, I just use a garlic press!
In a mixing bowl, add your mayo, sour cream, cream cheese. Add your spinach and mix again, then start gradually adding half of your mozzarella cheese, half of parmesan and asiago cheese blend, and fold in diced marinated artichoke hearts.
Set pan to medium-low heat and start on your sauce. Add 1 tablespoon of olive oil, tomatoes, and add garlic using the garlic press. Let this cook for 2 minutes until soft.
Add your mixing bowl ingredients, seasonings, pasta water, chicken stock, and heavy cream to pan. Stir everything and let sauce cook for at least 3 minutes on low, let it get a little thick. Taste for any extra seasoning needed.
Drain pasta, add pasta and sauce to pot and mix together thoroughly. Add to your baking dish and add remaining Parmesan and Asiago Blend and Mozzarella to top of your pasta. Add more cheese if you want it extra cheesy!
Place pasta in the oven for 10 minutes or until cheesy on top.
